theres a couple of panels that need attention from a bodyshop to be perfect but the rest of the car is really straight-it looks to me like it hasnt been polished for about six years-so basically a general clean up and also to "get to know the paintwork" kind of thing as i want to identify any blemishes or scratches etc that cant be sorted out without a spray gun-theres signs of where bird droppings have been on the roof and it looks like a cat has scratched the bonnet a bit - no point in having stuff sprayed when it would clean up with a bit of effort

You may ask the panel shop to mop your car that will save you a lot of work and will bring to car back to its former glory.
Do not rub t cut to much in to the paint work

very true - but its kinda nice to do it yourself on a few nice days and pat yourself on the back afterwards when you get a good result - tbh im almost tempted to wait until i want to sell it before i get the little bit of bodywork done in a shop - with my luck it would be keyed or similar by the time i want to sell it and id have to get it done twice-

Go for the Bilt-Hamber soft. You can just use water with it, you don't need any special lubricant, and it's designed for the first time clay-er.

And don't just break it in half, just take off small pieces to use one at a time. You can keep folding it over till it's become too used, then just throw that bit away. If you use small pieces then you won't lose much if/when you do drop it.
