I've got a magazine interested in featuring her alongside my dads skyline actually, so she is going into the garage soon to have the dents pulled and last bits tweaked.

Made some good progress! Whipped off the Callipers and greased the pistons, sliders, pins and pads several times, finding improvements in piston movement each time! So no ceasing going on here - WIN
The only pain is that the brakes are tougher than a nuns stare with engine off but when the servo kicks in the pedal drops too much - it should drop but not to the very back. The brakes on these are traditionally soft but when I get her tarted before a photo shoot I'll have the brakes bled properly in the garage.
So a success all in all, very happy:

Ah do explain please! I never knew they were adjustable on these. What do I do to make it a little tougher?

I don't know for sure that they are, but the MR2s one was. This is what I did:
There wasn't any pedal freeplay really, but it obviously alters the position of the pedal onto the pushrod so can excert more force on the master cylinder. Mine were as you described - hard as nails without assistance, but felt like they had air in them when the servo had a vacuum source. I'd bled them about 50 times 4 different ways and even had 2 garages bleed them... so once you're sure they're bled right you could try this.
