What's the difference between the reflectors in my 200 lights and the 300 lights then? I've not seen them side by side, but they look the same, as I can tell, from pics, and the 300's, and late 200's too I believe, had HID bulbs as standard. Were they just as bad?

I'm not exactly sure how they are different, but they definitely are. Both use reflectors though not projectors which is why people assume they are the same, but I guess the angles are just different.

The difference is that non factory HID lights have a reflector and factory HID lights have a projector.

Its why I havent fitted HIDs to my car because to do it properly you need the expensive late model projector headlights so you dont blind other drivers.

That isn't quite true, you do get reflector housings designed for HID bulbs (D2R bulbs instead of the projector D2S bulbs) and you do get projector housings designed for halogen bulbs (on Supras for example). As a general rule of thumb though, you're right, and IS200 headlights are not designed for HIDs.

I had these bulbs fitted in mine for a while, and don't think i ever got flashed? they have a cover fitted to the bulb that cuts the amount of light coming from the reflector at the bottom, reducing the glare to other road users? CLICK ME?

No version of the IS200 or IS300 ever came with projectors afaik. The only projector ones were aftermarket.

Also don't forget that a lot of German brand cars especially late Mercedes are using LED lighting and that is very white

The only projectors on the car are the OEM foglights.

The late model headlights with HID still have reflectors, but they must use different angles within the reflector itself to concentrate the light spread more.
