Can anyone help me please,
I've found out the valve springs from the celica 3sgte are the same part number as the ones for the 1ggte so I can swap them for updated ones, but the part number for the mr2 3sgte and 3sge are different.
How did the engine vary between the versions?

You need to know what age Celica. There are 4 revisions of the 3S-GTE.
Version 1: Celica ST165 (1985(?) - 1988)
Version 2: Celica ST185 & revision 1-2 MR2 (1989 - 1993)
Version 3: Celica ST205 & revision 3-5 MR2 (like mine was 1994-2000)
Version 4: Caldina ST246 (2001+)
If your part number really is unique to Celicas then it may be an ST165 part. But if you're comparing to MR2 numbers the parts for the older engine (has an AFM and TVIS so 8 inlet runners w/butterfly valves) can be different to the later version (MAP sensor, no TVIS so 4 inlet runners)
Yeah it's the oldest one, how rare are they?
So up rated parts will be even rarer, lol no up rated valve springs for me then
