I took my spare engine apart a few days ago. It's a '92 non-VVTi 1UZ engine from a Soarer, but it's basically the same as any UZ engine (although the heads are a bit different on the later VVTi ones). I have put the photos here as they might be useful.

What I started with:

Put my spare (front) sump on it, so that I can put the engine back down flat again without damaging the crank:

Put the engine back round the right way. You can see it has no timing belt or idlers, no water pump and no ancilliaries, but the oil pump is still there because it's a pain to remove (needs a puller):

Cam covers, HT lead/distributor brackets and engine hooks removed:

Close up of LH (passenger side in the UK) bank. The early engines have these big helical gears in the middle of the cams so the intake came can drive the exhaust cam. In the later ones these gears are inside the VVTi mechanism at the belt-end. Note oil feed pipe connecting cam caps I2 and E1:

Same head, cams removed to access head bolts. You do not need to remove the final intake cam cap (I6, at the very end of the head) to access the head bolt there:

Cam caps and oil feed pipe removed in order to get the cams out:

Head bolts removed from beneath cams. 2 of these (the furthest left and right ones on the exhaust side of the head) are outside of the cam covers:

Engine with the LH head removed. It's always preferable NOT to have cylinders full of water and rusty pistons:

The LH head off the engine:

And the underside of the head. Don't do this with the shims all still in place because they fall out:

All the bits and bobs removed in order to get the head off. On this side the oil feed pipe is still between I2 and E1, but they are gearbox end of the engine this side, rather than belt end, as they are always numbered left to right. Also on this head you DO have to remove the final intake cam cap (I6) to access the top left head bolt:

Back to the front of the engine, can't take the oil pump off without removing the timing gear, both of which you can see here:
