I'm in the middle of finishing another page of my "bat **** car ideas" book and I've got to the 240z build. Basically, I want the 1uz as a platform (non-vvti) but I want to drag it back to the 70s for that authentic 240z kind of theme. Plus an 8 throttle body, carbed v8 will sound amazing.

As far as I can work out, I'll need:

carburettors, probably weber carbs
distributor

what else? I assume I'd need something to control the timing, so is that possible without an ECU?

If you can find a way of fitting and driving a distributor then no ECU required.

Non vvti uz has twin distributors. You would have to do something to generate the spark in the first place though as the ignition is one of those Toyota 'hybrid' setups

Could I just replace it with a pair of (for instance) old Honda distributors? I take it I'd have to set the timing manually and just leave it from then on?
