Since the gt1's are made to order, is it possible to request inverted dampers for cars where this is non standard?

In the easiest possible way to answer… No.
Because inverted is for MacPherson Strut and so not applicable to the IS that use double wishbone suspension.

The GT1 actually uses a Twin-Reniforced Piston design that greatly increase side load capacity without going to inverted design.
Inverted design have more operational problem than upright suspension, the outer ramp seal is a weak point that will go dry and require grease as a service.
So we don't even use inverted for MacPherson strut because it doesn't provide a lot of benefit while making it more difficult to up keep, service, and use.

The Twin-Reniforced Piston are standard on the GT1, so you will have that standard.
