Isn't there some form of throttle spring/wire or something with the original kits? I'm sure I've read that somewhere. Would we not need little things like that?

It does more than just vent Sprinter, The bypass provides the air feed to the engine below 1/3 throttle. The original TTE kit had it bypassing the compressor, Janspeed improved it by bypassing the intercooler as well and providing the feed right to the throttle body.
You can have the setup without a bypass but it will increase fuel economy as the charger will always be under load.
