Well, I'm just guessing, so I could be wrong. But it looks to me like the cards are all in order in the first place, you don't get a close look at them. Then, as he's telling the story, you can see him re-cutting/re-ordering the cards himself in-between the sections, as the camera cuts away from the overhead view to a side view. When it's on the overhead view you don't see this bit so it looks more impressive. I presume the cards are marked so he knows how he needs to re-order them.
Yes but the people cut them (could cut them in special places). And yes he does shuffle and reorder them, but still. Thats an amazing trick, because he reorders them quickly. And still, they was in a randomISH order at the start, so there must be some method of getting them back in that order.

Saw David Copperfield in Las Vegas a few years back. Was amazing. about $110 a ticket (was around £50-£60) but in my eyes well worth it.
