Would a pair of 12" spal fans be a good replacement for the standard fans to give me some more room and would a 550x140x62mm 2.5" intercooler be the right size?

that intercooler size is perfect. It will fit with spot on without having to remove the crashbar.
I use 550x140x65 with my supercharger setup.

What size fuel return will I need is it an6 and what size feed from the sytec regulater to the fuel rail, do I need an10 oil return and an4 oil feed to the turbo?

I use an6 so should be good.

Oil feed depends on turbo. For ball bearing they need a restrictor I think

just make sure the fuel pump is a genuine walbro one mate not a cheap knock off

With the regulator id suggest getting one with a gauge for easier to set your fuel pressure at 3 BAR at idle.
