When you say they make the car sit too high, I assume your reffering to the distance between the top of the tyre and the arch? Not the ground clearance, because with that wheel/tyre combo yours should actually be lower than an equivalent car with the same springs but correct tyres.
But like Ormi said, tyres can be found for dirt cheap money. Maybe get a set of no name bargain tyres for the back and put some decent ones on the front to save if you really don't like how they look?
Seems a shame to have done such a good job refurbing them to then not use them!

It's difficult to say really, if you want to fill the arches then go for the 225/40. But you may find yourself wanting to lower the whole car if you do...I started off on 17s with 215/45, and when I switched to the 18s on 225/40 I noticed the increase in ride height. (although they do fill the arches better) And coming from stretched 215/35 you'll probably notice it even more.
Could you get something in between for now? Like a 225/35, and then maybe lower it as well at a later date?
I think I would run 225/40/18 on those wheels personally.
The higher profile should help them sit better in the arches, and the wider tyre would also give a little bit more grip.
I know that tyres can get very expensive, but I'm still not sure I would recommend skimping on them. Cheap tyres will DOWNGRADE your car's acceleration, handling and braking, especially in the wet. However you modify the car to make it perform better, you'd be shooting yourself in the foot a bit if you put rubbish tyres on.
